Slow Cooker Baked Potatoes
A few months ago, a friend told me about how she ‘bakes’ her potatoes in the crock pot and it was LIFE CHANGING! We have been having stuffed Baked Potatoes for dinner once a week! We rotate the toppings, from Pulled BBQ Chicken to leftover chili or taco meat! There are so many options! I make enough potatoes in the Slow Cooker for dinner, and for the kids and I to have some for the next day for lunch. Topping a baked potato with last nights meat and veggies is a great and delicious way to use up leftovers! Finding out I could ‘bake’ our potatoes in the slow cooker has put potatoes on our menu quite a bit! Which is awesome because they are healthier than french fries and so inexpensive!
Slow Cooker Baked Potatoes
Ingredients
6 Baking Potatoes
Oil
Kosher Salt
Toppings of your choice!
Directions
Scrub baked potatoes and rinse but don’t dry. Place each potato on a piece of aluminum foil. Poke holes in each potato with a fork. Drizzle with oil and sprinkle all over with kosher salt. Ball up a few pieces of aluminum foil and place in the bottom of the slow cooker. Next, put foil wrapped potatoes in the slow cooker on top of the foil balls. Cover and cook on low for 6 – 8 hours. Turn to warm until ready to serve. Top with all your favorite potato toppings or last nights leftovers 🙂
