Hot Chicken Salad Casserole
Happy Friday! Today I wanted to show you a ‘leftover makeover’ recipe that I have been making for years and it is one of our favorites! This is a great way to use up leftover chicken and/or leftover rice! We served ours with Southern Style Peas and sliced tomatoes. YUM!
Hot Chicken Salad Casserole
Ingredients
3 Cups cooked Chicken Breast, chopped or shredded
2 Cups cooked Rice
3 Hard Boiled Eggs, chopped
1 small onion, finely diced
1 lemon, juiced
1 can Cream of Chicken Soup
3/4 cup Mayonnaise
1 cup shredded Sharp Cheddar Cheese
1/2 tsp Lawrys Seasoning Salt
1/2 tsp Black pepper
Directions
Heat oven to 350 degrees, In a large bowl, mix all ingredients. Pour into a buttered 3-quart casserole dish. Bake for 45 minutes or until casserole is hot and bubbling.
