Balsamic Glazed Roasted Asparagus
Good afternoon everyone! We have had a fun weekend getting errands done for my brother’s wedding that is coming up soon! My daughter (age 9) is going to be a flower girl and my son (age 3) is going to be the ring bearer so we have had dress and tux fittings and all kinds of fun ‘out of the norm’ activities! I will definitely be sharing some pictures from the wedding. My sister just so happens to be a Wedding Photographer so it is extra special for us that she is going to get to photograph our brother’s wedding!
I wanted to take a minute to share a delicious vegetable side dish that we love to have as a side for steak or a fancy chicken dish (Such as this or this) This has ‘date night in’ written all over it 🙂
Balsamic Glazed Roasted Asparagus
Ingredients
1 bunch of Asparagus, ends removed
1 TBSP olive oil
1/2 tsp salt
2 TBSP butter
1 TBSP Soy Sauce
1 tsp Balsamic Vinegar
Directions
Preheat oven to 400 Degrees. Place trimmed asparagus on a cookie sheet. Drizzle with olive oil and sprinkle with salt. Roast for about 12 minutes or until it reaches your desired tenderness. (I like mine a little on the more done side, with the ends starting to brown.) While Asparagus is roasting, melt butter in a small sauce pan over medium heat. After butter is melted, stir in soy sauce and balsamic vinegar. Remove from heat. When Asparagus is done, drizzle balsamic glaze over it and serve warm. Enjoy!
